Today I Learned . . .

Imitation crab meat is widely used in America as a replacement for 100% crab meat.  This is due in large part to the popularity of sushi.  Imitation crab meat is typically Alaska Pollock (or called Walleye Pollock) of sometimes Snow Cod or Whiting.  The fish is processed, minced and de-watered to create a thick paste called surimi, something developed in Japan 800 years ago.
